Whole-cluster pressed, with occasionally some smaller portion crushed by foot prior to pressing, then barrel-fermented with ambient yeasts, and aged for 12–14 months in 20–25% new French oak, and another 5 months in steel before bottling unfined and unfiltered. Full malolactic conversion. This wine represents a selection of juice from the final, hardest press cycle from all the Chardonnay sites that Littorai farms. 331 cases produced. Aromas of candied lemon peel, lemon zest and lemon pith. Bright flavours of lemon curd, lemon peel and orange blossom have a light chalky texture and a brisk stony quality. Light saline notes in the finish. (AY)
