Unoaked Assyrtiko Bottled in Neméa. More spicy than the Monograph and a touch cedary. Green fruits, grapefruit, less citrusy than the Monograph. Stony aroma and more chewy texture. Much more intense and compact. All about the texture here. A little bit like the Sauvignon Blanc thiols. (Yiannis Paraskevopoulos did an experiment adding an enzyme that breaks down the glycosides and it made the wine like Sauvignon.) More chalky than the Wild Ferment 2018, drier, chalkier, leaner without the oak. (JH)
