Tasted blind, the 2007 Gevrey Chambertin Combe Aux Moines has a noticeably deeper color, one that actually diverted me away from Burgundy! The nose is surprisingly deep and introspective considering how so many 2007 red Burgundies opened early; there are hints of blackberries and even star anise developing in the glass. The palate has a pastille-like purity, fine tannins and a seductive roundness and suppleness in terms of texture. There is very good weight here, although it is one of the few 2007s where I would suggest affording a couple more years in bottle.

Good full red. Wild small red fruits are lifted by pungent minerality on the nose. Bright and high-pitched on the palate, showing the captivating sweetness of the year but dominated by its tannic spine today. At once sweeter and firmer than the Cherbaudes, and more vertical in its shape. Finishes with superb lingering perfume. I'd wait three or four years on this beauty. At this point in our tasting, Fourrier told me that acidity levels at this domain were higher in 2007 than in 2005.

Bright red-ruby. Wonderfully perfumed aromas of black raspberry, smoke and minerals. Offers a superb combination of sweetness and clarity of fruit; the most intense of these 2007s to this point but quite backward today and a bit dominated by its tannic spine. But this is very refined. Finishes juicy and very long, with a suggestion of torrefaction.

Immediately charming and enticing. Complex fragrance of fruit and also slightly floral. Then a touch of exotic spice. But you just can't separate out the elements. Sturdy but not heavy, mouthfilling but not pushy. Rich and long and scented from start to finish. Wonderful. (JH)
