Tasting notes
The 2021 Cabernet Sauvignon Estate checks in as 100% varietal that saw an extended maceration (50-60 days) as well as 26 months in new French oak. It's a massive, concentrated, extracted 2021 that has incredible potential, yet it might need a decade or more to be drinkable. Black fruits, plums, smoked tobacco, graphite, and roasted coffee notes define the bouquet, and it hits the palate with full-bodied richness, a pure, layered, elegant mouthfeel, plenty of ripe tannins, and a great finish. It has all the right components, yet it's inward, reserved, and tight. I would give bottles 4-5 years, and it should be easier to see where this goes.

Still in barrel, the 2021 Cabernet Sauvignon Estate is an embryonic young wine from Vineyard 7 & 8. Bright floral and spiced top notes meld into a core of blue/purplish fruit. The 2021 is more refined and less opulent texturally than most wines here, but it has plenty of richness and overall concentration. It will be interesting to see how this turns out.
The 2021 Cabernet Sauvignon Estate is a classic Vineyard 7 & 8 wine. Silky and plush, with notable richness, the 2021 is racy to the core. Dark red-toned fruit, cinnamon, mocha and espresso meld together effortlessly in a seamless, plush Cabernet. The style is one of opulence and textural intensity.
