I loved the 2021 Toro De Paso. This beauty brings some classic Rioja-like character in its bloody red and blue fruits, vanilla oak, black pepper, and sandalwood-like aromas and flavors. With medium to full-bodied richness, a pure, layered, mouth-filling texture, and classic, building Tempranillo savory tannins, this beauty will evolve for a decade. It's the finest vintage of this cuvée I've tasted. The blend is 74% Tempranillo, 12% Garnacha, 11% Carignan, and 1% Graciano, aged 19 months in a mix of French and American oak.

The 2021 Toro de Paso is a blend of 76% Tempranillo, 12% Garnacha, 11% Carignan and 1% Graciano from the Paper Street Vineyard. It was matured for 19 months in 13% new American oak, 39% once-used French oak and13% once-used Hungarian oak. It becomes pure and expressive after several minutes in the glass, with a core of briary fruit and dark cherries accented by mint, saddle leather, iron, tobacco and meaty tones. The full-bodied palate has a deep core of earthy, ferrous fruit framed by gently chewy tannins and surprisingly juicy acidity, and it has a long, savory finish. It will benefit from 3-5 years in bottle.

Aged 19 months in 13% new 265-litre American oak, 39% once used 265-litre French oak barriques, 13% once used 265-litre Hungarian oak and 35% neutral 228-litre French oak barriques. 217 cases produced. Tasted blind. Deep opaque purple with a fuchsia rim. Muted nose with a touch of black olive. Dense with high ripe tannin and elevated acidity on the palate. Not a ton of fruit. (SCJ)
