Whole-cluster pressed into stainless steel, where the wine ferments with selected yeast. Spends at least nine years on the lees before disgorging. Dosage 7 g/l. Light yellow-gold with very fine bubbles. Smells of candied lemon peel and sea air. A salty, lemony, frothy, silky mousse delivers flavours of roasted nuts, butterscotch, marzipan and dried orange peel on the palate. Excellent acidity with hints of nut skin lingering in the finish. A fragrant nose of fresh flowers, ginger, mint and sliced lemon. Medium-bodied with a lot of layered complexity. Herbs, nuts and white tea spice mix on the palate, atop a core of citrus fruit and green apple. Long. A pleasure. Vegan. Drink or hold.
