Deep garnet colored, the 2005 Cabernet Sauvignon Beckstoffer To Kalon opens with gregarious crème de cassis, plum preserves and blueberry tart with notions of espresso, tree bark, Marmite toast and black pepper in the background, with a waft of potpourri. Full-bodied, rich and spicy in the mouth, it offers velvety tannins and great freshness, finishing long with a lively herbal lift.

(15.2% alcohol; clone 6): Moderately saturated medium ruby. Very ripe aromas of blackcurrant, black cherry, minerals, tobacco and mocha hint at a liqueur-like ripeness. Fat, wonderfully silky and deep, but with lovely spicy lift to the ripe plum, currant and soil flavors. Best today on the fresh, very long whiplash of a finish, which saturates the palate with ripe berries, spices and minerals. Much sweeter and sexier than the Cimarossa Vineyard bottling today. A fully ripe and very complete Cabernet.
Loam, forest floor and ripe blackberry on the nose, along with tar and cedar on the palate. The wine is buffed to a fine sheen, with good depth and refreshing acidity, though it’s a tad sweet. (LM)
