The 1994 Cabernet Sauvignon Estate is one of the first Togni wines I tasted with some age, where I started to see how these wines develop in bottle. It remains super expressive, with tons of graphite, savory and mineral character. The 1994 is not quite as opulent as some wines, but rather a Cabernet built on energy and vertical drive. It’s a style I personally find very appealing.

Two bottles of the 1994 Cabernet Sauvignon (Library Release) have both been terrific. Today, at twenty years of age, the 1994 is firing on all cylinders, with breathtaking complexity and nuance to burn. The 1994 is a classic Togni Cabernet laced with savory/spiced overtones, graphite and spices, all supported by firm yet nicely balanced tannins. I imagine the 1994 will drink well for another decade or so, although I don't expect to see too much improvement from here. Sadly, all my bottles are gone.

Togni’s 1994 Cabernet Sauvignon really should have had more air. Tonight, it is striking, but I have also tasted better examples than this. Savory herbs, tobacco, incense and black fruit gradually open up in the glass. This is a gorgeous wine, but the best examples have a level of visceral thrill that is missing here.
