Ferment stopped by the addition of grape sprit and then left on skins until the end of the winter. Pressed and aged for eight years in 200-litre oak casks previously used for malt whisky. Deep burnt orange colour. Wonderful intensity and freshness of orange fruit on the nose with an edge of burnt caramel that reminds me of madeira, plus a hint of smokiness. Rich, deep and long and makes your tongue tingle with intense orange and barley sugar flavours. Starting to show a fabulous nutty burnt caramel side though there's still so much more to come thanks to a great balance between sweetness and acidity. (JH)
