Blended of 60% Chardonnay and 40% Pinot Noir coming mainly from cool climate Victoria regions, 30% of the NV Brut Chardonnay/Pinot Noir batches undergo malolactic fermentation while reserve wines are stored in a combination of large oak barrels, barriques and stainless steel and comprise more than 20% of the blend. It is produced in the traditional method and following the secondary ferment the wine is aged on yeast lees for 15 to 18 months. Giving a delicate to moderately intense nose of apple tart, honeyed toast and peach blossoms, it has a light to medium body and a good concentration of apple and fresh pear flavors. A dry style, the crisp acidity is well balanced by the faintest hint of dosage sweetness (9 grams per liter) and the bubbles and small, fine and persistent. Drink it now.
