Ellman's 2018 Cabernet Sauvignon The Estate features smoky, caramelized wood, black cherries, cassis and a slight herbal streak. A barrel-selection of the best this Soda Canyon vineyard has to offer, it's full-bodied, concentrated and velvety in the mouth, finishing a bit warm, with a rich, velvety finish and echoes of dark chocolate.

Starting with the 2018 Cabernet Sauvignon The Estate, this dense purple-colored beauty has a great nose of smoked blackcurrants, toasted spices, tobacco leaf, cedar, and candied orange peel. This all carries to a full-bodied Cabernet with flawless balance, beautiful mid-palate depth, and ripe, polished tannins. This complete, balanced, unevolved Cabernet Sauvignon needs 3-4 years of bottle age and should evolve for two decades or more.
The 2018 Cabernet Sauvignon Estate emerges from a parcel with light volcanic ash soils. Powerful and yet also light on its feet (for such a big wine), the Estate is a fascinating wine. There is plenty of fruit richness and heft, but all supported by clean savory and mineral undertones that add complexity.
