Tasting notes
Even better, the 2021 Cabernet Sauvignon The Estate is straight-up awesome and will stand up to anything in the vintage. Pure cr me de cassis, crushed stone, liquid violets, and classy oak all emerge from this 100% Cabernet Sauvignon, which is full-bodied, concentrated, and flawlessly balanced. There are a scant six barrels produced, but if you see a bottle, buy it. It will probably take a decade to hit maturity, but it will evolve for well over two decades.

The 2021 Cabernet Sauvignon Estate marries succulent fruit with power, depth and structure. Dark red fruit, lavender, rose petal, spice, menthol and licorice are all amplified in this opulent, heady Cabernet . There’s an extra dose of structural backbone to match all the opulence.
An excellent effort from consultant Andy Erickson, Ellman's 2021 Cabernet Sauvignon The Estate adds faint herbal nuances to bold and intense cassis and black cherries. It's medium to full-bodied and superbly concentrated, nicely layered and textured, with a long, velvety finish tinged with mocha. The vineyard, farmed by Mike Wolf, is on Silverado Trail at the base of Soda Canyon.
