Whole-cluster pressed, settled in tank, and then ferments with ambient yeasts in old oak barrels used for white-wine fermentation. Ages on the lees for 3 months while malolactic fermentation completes. Pale peachy pink. Aromas of flowers, watermelon and citrus peel. Beautifully bright and saline flavours of citrus peel, wildflowers and pomelo have a wonderful tangy brightness to them and a chalky, mineral undertone. Excellent acidity. The wine stays just this side of austere to ultimately land in a shimmering crystalline realm of refreshment. (AY)
