Available in magnum from the winery as a library offering, the 2000 Cabernet Sauvignon is remarkably fresh, all cassis and black cherries on the nose. It's medium to full-bodied, expansive and supple, with a silky feel across the mid-palate and a long-lingering, elegant finish. It's still fresh, with ample life ahead of it (at least from magnum).

The 2000 Cabernet Sauvignon is a fine choice for readers looking for a Mayacamas Cabernet to drink now. It offers gorgeous aromatic complexity and good depth for the year. There is a bit of edginess in the tannin, and the edges are starting to fray, so I don't see the 2000 improving from here, although it certainly has plenty of life left. Harvest wrapped on October 19, very late by the estate's standards.
The 2000 Cabernet Sauvignon is round, succulent and super-sexy, with soft contours and plenty of immediate appeal. Just beginning to show the first signs of tertiary aromatic complexity, the 2000 is a great choice for drinking now and over the next two decades. The style is unctuous, with a demi-glace like intensity that coats the palate on the finish.
The 2000 Cabernet Sauvignon is another terrific choice for drinking today. Grilled herbs, cured meat, game, black plum, smoke, sage, rosemary and leather flesh out in a wine with gorgeous aromatic and flavor complexity. The rich, demi-glace like texture wraps around the palate all the way through to the finish. All of the classic, brambly Mayacamas signatures are in place.
