Certified organic (Ecocert). Les Crais is on an east-south-east-facing slope on very stony limestone scree. Hand-picked. Fermented in French oak barrels (37% new), light bâtonnage for the first 10 days, barrel ageing on fine lees for nine months. A tactile wine pinging with pomelo and citrus-peel fragrance and pithy pull. A blue-black squiggle of inky minerality. Almost aggressively fresh on the finish. It really wants you to feel the finish.
