Samuel Billaud’s straight Chablis is another benchmark example in 2023. The nose combines his typically savoury leesy character with a stony purity. It’s chalky and mineral, with a thrilling line of acidity that drives the wine forward – on into a long finish which shimmers with oystershell freshness.

The 2023 Chablis Grands Terroirs has a crisp petrichor-scented nose that seems to have shut down a little. The palate is livelier with a cutting line of acidity. It's quite tensile and steely with a fresh, green apple- and lemon-tinged finish. Drink this without delay!

Samuel Billaud’s 2023 Chablis Village is sourced from three plots, two on the left bank and one on the right bank. Opening in the glass with notes of tangerine zest, bread and beeswax, this wine is medium to full-bodied, rather tightly wound and laden with tangy acidity and concludes with a long, saline finish. It is vinified entirely in steel.

A little more closed than the Petit Chablis but as it opens there is a pretty orange note. An unusual combination of wild flowers and stony citrus. Tension and freshness are the key. Tight but long and finely textured in a very gently chewy finish. (JH)
