2020 Cahors Probus

Full bottle 1,329 g. Certified sustainable (HVE). 100-year-old Malbec vines. Roasted caraway aroma. Tight, savoury, drying tannins and roasted-vine-tomato flavours. Very high acidity. Dried herbs and earthy spices. A sooty sensation on the finish. It was pretty unapproachable and impenetrable when first opened, and it wasn't until I'd left it open in the bottle for 18 hours that it made any sense at all. With decanting, the throttled tension and bitter astringency fell back to make way for beautiful (if still very tannic) blackcurrant fruit. The vegetal pungency gave way to herbal fragrance. Make sure you decant this! (TC)
