Bertrand Cherel. The juice is cold settled with alcoholic fermentation regulated between 16-20°C in stainless-steel tanks. Natural malolactic fermentation. 10 months aging on fine lees before bottling. 18 months bottle ageing prior to release. Nicely juicy and green-fruited even if not very mineral. Correct. Nothing to object to even if fairly earthbound. (JR)

Fresh cordite and green citrus with good chalky texture, decent length and fresh acid. Archetypal and respectable. (RH)

100% Chardonnay. La Chablisienne was founded in 1923 as the flagship of the Chablis appellation. The vines are grown on Kimmeridgian soil with a density of 5,500-6,000vines/ha. Some plots are subject to ‘lutte raisonnée’. Harvest took place at the end of Sept 2008 with a yield of 60hl/ha. Fermented in stainless steel at 16-20ºC for 12-13 days. Natural malolactic and 2-6 months ageing on fine lees before bottling. No oak maturation and fined with bentonite. Suitable for both vegetarians and vegans. TA 4.3g/l, pH 3.22, RS 1.2g/l. Dusty, chalky nose. Dry, fine texture, light citrus and very fresh but a bit dull. Persistent. (JH)

Vegetal notes and, oddly, porridge with treacle on the nose. Fresh apple, crisp, tart and correct with a revitalising bitter tang on the finish. GV. (RH)
