Organic, biodynamic practices (uncertified) Soils of mostly loess laced with limestone and granite veins. The majority (80%) was directly pressed, while the remaining 20% was fermented on the skins for 10 days in old 600-litre wooden barrels. Both parts were aged in those same barrels on the full lees until bottling. No added SO 2 . Wild flowers. Walnut skins. Apple peel. Dry, fresh and juicy eddies with a bitter snap of kumquat and green herbs. Lithe tension on the textured palate, and a stormy grace that needs to blow around a bit and make some noise before settling into its surprisingly delicate final form.
