This 25-year-old single malt from The Dalmore demonstrates why the Highland distillery is so highly regarded. After an initial maturation period in ex-Bourbon casks, the whisky was transferred into a combination of casks that previously held 30-year-old Matusalem Oloroso Sherry (enriched with Pedro Ximénez) and Tawny Port. World-renowned Master Distiller Richard Paterson then married the liquid together to produce an exceptional Dalmore single malt. Please note, quantities are extremely scarce and therefore orders are limited to one bottle per customer.

Classic Dalmore sherry notes on the nose, then a rush of spices, dried chile, dates, dried cherry, Cerignola olive, nutmeg, and tobacco leaf, though the aromas are bone dry. Deep concentrated layers of fruit, with purple plum, damson, and port notes mingling with orange peel, raisin, and a hint of balsamic vinegar if you’re patient. The tawny port pipe finish really takes this to another level. Quite superb.

The Dalmore is one of the most revered Scotch whisky producers. The Highland distillery, located on the shores of the Cromarty Firth north of Inverness, has been producing malt whisky since it was founded by entrepreneur Sir Alexander Matheson in 1839.
