Cold-settled after pressing. 100% malo, 22 months in barrel. How does one even begin to describe this? Cultured butter, toast, grapefruit-oil bitters. But it’s not really any of those things. This is so complete. It doesn’t need me. The nose changes, moment by moment, and so does the wine in the glass, shifting like light on water. A wine you really need to spend hours with, not minutes.
