Higher percentage of Dijon clones 114, 115, 667, 777 etc that are now 35–40 years old. Shorter time on skins – just a week – and at a cooler temperature too. 35% new oak. (Yields are 25–40 hl/ha depending on vintage.) Mid, shaded garnet. Sweet, fully ripe nose. A wine that could be described as middle-aged in that it gives the impression that it still has quite a way to go. Quite firm but the tannins in evidence are very fine. Purer fruit than the 2008. Open-top oak fermenter, four weeks on skins, aged in 100% new French oak for 18 months. No fining, no filtering, no pumping. Clementine fragrance and savoury and a little bit of chipotle, in a smoky-fruity pepper way. Gorgeous! That chilli-flakes edge lingers in the mouth, too, along with a damp earthiness that is almost petrichor but not quite. Rain-on-rocks freshness and minerality. Cherry-candy sweetness, chicory-leaf bitterness, green-peppercorn spice. Striking, distinctive, powerful. Throws the gauntlet down with un-Spätburgunder-like defiance. (TC)
