43% Chardonnay, 29% Pinot Meunier and 28% Pinot Noir. Hand-harvested and made by champagne method, with maturation on lees for 5 years to gain richness and complexity. Located in the Weald, between the North and South Downs in West Sussex on gently rolling hills topped with greensand soil on a chalk bedrock. Nyetimber was established in 1988 by Stuart and Sandy Moss. Suitable for vegetarians and vegans. TA 12 g/l, pH 3.03, RS 13 g/l. Some depth and definite maturity on the nose but with a slightly cheesy note. I wouldn’t keep this much longer. (JR)
