The owners of eight high-end pubs and restaurants in London have launched a new wine school for staff so customers can be assured of getting the right bottle of Vosne Romanee or Chassagne-Montrachet with their meals.
Tom and Ed Martin, the managers of spots like Sloane Square's The Botanist and The Empress of India in Victoria Park, plan to reward staff who show oenological aptitude with trips abroad and fine wines, Eat Out magazine reports.
The ETM Wine Academy will focus on regions of origin, grape varieties, terroir and food pairings, as well as management and storage of wines.
"We already take wine very seriously at all our pubs and restaurants, but we want to give our managers something to get their teeth into that will not only teach them new things, but help them and their colleagues do their jobs better," Ed Martin told the publication.
Earlier this year, the ETM Group opened the Cadogan Arms on King's Road.
