The 2014 Saint Aubin 1er Cru en Remilly, much to my surprise, had the least expressive bouquet compared to the five other Saint Aubins from PYCM. This is clearly intent on biding its time. The palate is fresh and poised, here unfurling with each swirl of the glass to reveal notes of white peach, freshly-sliced pear and a touch of salinity lending tension on the finish.
