Critic Notes

From cask, Dauvissat’s 2006 Chablis Preuses smells of toasted grain, roasted nuts, pungent buckwheat, ripe peach, high-toned floral perfume suggesting gentian, and ocean breeze. An amazing depth of indescribable minerality – approximating meat stock and crustacean reduction, with suggestions of soy – saturates the palate, leading to a generous yet still mysteriously savory, mouth-watering finish that contrasts dramatically with the chalky, faintly bitter character of the La Forest. This should become an extraordinary example of terroir and minerality within the context of enveloping richness, and of richness without the least bit of heaviness, and should mature excitingly for the next 12-15 years. Not that I would feel any compunction about pulling a cork now. “Compulsion” would be a better word for what I would feel if I were sitting on bottles of this gem! Exotically ripe, honeyed, almost buttery in texture, yet with palate-nipping hints of botrytis, the 2005 Preuses finds room for some mysterious, savory mineral nuances as well, but is not in the exalted class of this 2006. Chablis: The Great Divide
Chablis’ historic and international reputation has been both a great asset and a hindrance with regards to the quality level of Chablis production. With such a well-recognised name and a fairly neutral style at the entry-level point, there has been huge demand for cheap Chablis in practically every retail wine sector around the world. When you add in the decimating ...

Samuel Billaud - Chablis' Rising Star
Chablis has seen a real renaissance the last few years, with critics such as Neal Martin stating, Chablis “articulates terroir with greater transparency than any other wine region”. He goes on to say “… in talented hands Chablis can satisfy both the senses and the intellect…the finest Chablis wines are uncompromising, challenging and cerebral.” In the same article Neal Martin ...

Dining Out in Chablis: 3 Restaurant Recommendations for Wine-Lovers
Despite the impressive amphitheatre of Grand Cru sites that surround this beautiful and peaceful village, Chablis is all-too-often missed off the itinerary on food and wine tours of Burgundy. However notwithstanding its petite size, Chablis is bursting at the seams with culinary surprises. There is a vast array of truly unmissable restaurants, all well-versed in curating menus to complement the ...

A visit from Domaines Barons de Rothschild
This week we were honoured to host our long standing partner Domaines Barons de Rothschild's commercial director Jean-Sebastien Philippe for a very special tasting.... It is not every day that one has the opportunity to taste a line up of wines from all of DBR's Bordeaux properties; in fact even individual tastings rarely take place outside of Bordeaux, so we ...

A New Era for Domaine Billaud-Simon
In 2014 Domaine Faiveley acquired one of the best-known names in Chablis, Domaine Billaud-Simon, amassing around 20 hectares of vineyards in some of the best terroirs in the region. During the takeover, Olivier Bailly stepped in as winemaker taking charge of winemaking from the 2014 vintage and gaining full viticultural control from 2015. Olivier has had some great experience both ...
