The Michel 2006 Chablis Foret (like the Montmain, from “middle aged” vines that represent some of the earliest clonal selections planted in Chablis) displays generous ripe peach and citrus allied to alkaline, chalky, saline, and iodine mineral character. Its long finish offers admirable refreshment as well as mineral complexity. If one wanted to point to a single wine as archetypal Chablis it would be hard to find a better subject, and I expect this will prove highly versatile as well as succulently satisfying for the next 4-6 years.
