Wolfcraig is a brand new Scotch whisky distillery – and one of the most exciting projects that we have ever seen. The aim is to produce a new Highland single malt that sits alongside the world’s best whiskies.
The team behind the distillery is one of extraordinary experience. Richard Paterson OBE, aka “The Nose” and the Master Blender behind Dalmore, is the third generation of his family to blend whisky, with over 50 years’ experience. In 2021 he was awarded an OBE for services to the Scotch whisky industry, while having received various other awards for his contribution to the industry. He was an early pioneer of wine finishing and is a blender of incomparable skill. He is joined by Michael Lunn (former Chief Executive of Whyte & Mackay), Dr Alan Rutherford OBE (former Production Director at Diageo, Master of the Quaich and previous President of the Malt Distillers Association of Scotland) as well as Ian MacMillan (a Master Distiller, also a Master of the Quaich and a member of the Worshipful Company of Distillers).
The project has both serious ambition and financial backing, with construction of a £15 million distillery near Stirling due to start in summer 2021. The whisky is going to be true to the Highland style but individual in character, with a muscular, full-bodied profile from the reflux of the double ball still that they plan to use. The whiskies will, of course, be aged in the finest wood – with Richard Paterson using his half-century of experience to decide upon the exact finishing options and final blends. Production will be strictly limited, with the focus firmly on quality over quantity.
