Today sees another highly-anticipated release, this time from Chateau Haut-Bailly, the Pessac-Leognan estate that has wowed the critics in 2019, producing a wine of exceptional beauty and balance.
Veronique Sanders, general manager at Chateau Haut-Bailly, summed up the 2019 wine with one word – “WOW” and a big smile! She explains how for several years, they have been looking for silky tannins thanks to soft extractions at lower temperatures. This year, they undertook a fermentation at an even lower temperature than usual (24°C) to preserve the perfect freshness and elegance of the fruit. This adaptation paid off, producing a wine with exceptionally fine tannins and beguiling aromatics.
The 30-hectare high-density vineyard is dominated by Cabernet Sauvignon (60%) and Merlot (34%) with a splash of Cabernet Franc and Petit Verdot completing the picture. While the vines are on average 35 years old, there is also a rare four hectare plot of century-old, ungrafted vines that are included in the Haut-Bailly Grand Vin. "The 2019 Haut-Bailly II is a very serious second wine. Big, potent tannis give the 2019 much of its somber, brooding personality. Black cherry, graphite, licorice, cloves and new leather infuse the 2019 with tremendous complexity. Readers should be prepared to cellar the 2019 for at least a few years. If this tasting is any indication, it is a real powerhouse with quite a bit of cellaring potential."
