The winery ferments plot by plot. At the start of the century, the Castéja family worked with the late consultant Professor Denis Dubourdieu and adopted very cool fermentations for its red wines in a bid to create fresher styles. Following the fermentation, the grand vin spends 16 to 18 months in around 50-60% new oak barrels.
Its second wine, Lions de Batailley, was first created in 2014 takes its name from the two formidable stone lions that stand at the entrance to the château.
