In contrast to the jovial expressiveness of the prior wines this is much more reserved with its ripe yet cool aromas of dark berry fruit liqueur, spice and wet stone. The silky and equally cool and restrained middle weight flavors offer outstanding definition on the rich, energetic and hugely long saline-infused finish. This is one seriously impressive Caillerets but note well that it's built to age. Tasted: Apr 15, 2013. Drink: 2023+



Tasted blind at the Burgundy 2011 horizontal tasting in Beaune. The oak is prominent on the nose of the Volnay 1er Cru Les Caillerets ’11, although there is sufficient fruit to back it up. The palate is medium-bodied with crisp tannins. It is quite pointed in the mouth with sour cherry, raspberry and spice, leading to a structured and slightly austere finish. Since taking full control of the family estate, Domaine Jean Boillot, in 2005, winemaker Henri Boillot has become renowned for the sheer quality of his wines, made using vines which are more than 60 years old. He renamed the estate Domaine Henri Boillot soon after taking it over to eliminate confusion with his brother’s estate, Domaine Jean-Marc Boillot.Boillot’s negociant arm, Maison Henri Boillot, is a benchmark producer of French estate wines which are outstanding examples of some of the Cote d-Or's most prestigious crus. From village-style Meursaults to Le Montrachet, Boillot’s wines have an intense minerality and are structured, linear and ageworthy. Although Henri does not own the vineyards from which his grapes are sourced, he farms them as meticulously as his own and uses the same methods to make the wines.
