This is aromatically reserved to the point of being mute though aggressive swirling eventually coaxes reluctant notes of spiced plum, earth and an array of various dark berries from the glass. There is a velvety and caressing mouth feel to the vibrant mineral-driven medium weight flavors that possess good energy on the slightly drying, complex, rich and powerful finish. There is plenty to appreciate though the less than perfect balance is not this wine's strong suit. Apr 2015, www.burghound.com, Drink: 2019+

The 2013 Savigny-les-Beaune 1er Cru les Dominodes has a slightly disjointed nose at the moment with quite pronounced forest floor notes developing in the glass. This is definitely an earthier Dominodes compared to the 2012 last year. The palate is structured and masculine with chalky tannins, firm grip but just missing a little flesh toward the stern and assertive finish. Hopefully, this will mellow by the time of bottling because it feels a little “surly” and a little ephemeral at this premature stage. Nov 2014, www.robertparker.com, Drink: 2016-2021

(cropped at just 23 hectoliters per hectare): Bright, dark red. Black cherry, casssis and licorice on the nose. Juicy, spicy and very tightly wound; at once more concentrated and more tannic than the Guettes, with the dark fruit and spice flavors spreading out to saturate the palate. This densely packed, horizontal wine is clearly better balanced than the 2014 edition and should repay several years of cellaring. Mar 2016, www.vinous.com, Drink: 2021-2029

Arguably the finest vineyard in Savigny. The fruit here is very pure indeed and there is a completeness and a depth that follows. This is from a blend of parcels throughout the vineyard. There is a distinct “block” of fruit here – a big wine. And an impressive one. Serious stuff. Jan 2015

Domaine Jean-Marc & Hugues Pavelot is a relatively new discovery for F+R and we have been shipping their outstandingly good Savignys for just under two years.

Hugues Pavelot, like many Burgundians, is both quiet and unassuming. The winemaking here is uncomplicated yet precise, and spending half an hour chatting and tasting shows his clear passion and understanding of the soil. Their vineyards spread across the appellation of Savigny, and a tasting here is a lesson in the quality and variety of terroir in Savigny. These wines remain under the radar for the moment and offer exceptional value. There is remarkable complexity and expression of terroir here.
