
Chateau d’Issan is located in the Margaux appellation with a gravelly terroir. The plantings consist of 62% Cabernet Sauvignon and 38% Merlot. Fruit is harvested manually, then double hand-sorted.
Fermentation takes place in two recently renovated vat houses, and continues in temperature-controlled cellars for batches undergoing malolactic fermentation in barrels. Following vinification, the wines are tasted and barrels are set aside for assemblage, one batch at a time. The final wine is matured for 18 months in 55% new oak barrels, then fined using egg white.
