Canon
 
Chateau Canon is located in Saint Emilion over a former limestone quarry with a clay top soil. The plantings consist of 75% Merlot and 25% Cabernet Franc. Fruit is harvested manually, then double hand-sorted.

Fermentation takes place in double walled stainless steel vats. The final wine is matured for 18 to 20 months in 50 to 70% new oak barrels. The second wine is called Clos Canon.
