
A partial enclave of Chateau Pavie Decesse on the Saint-Emilion clay-limestone plateau, the terroir is located 80m above the Dordogne Valley. Bellevue Mondotte’s terroir combines meagre soil, south-facing sun exposure and excellent natural drainage thanks to its hillside location.
Yields are managed by green harvesting, with a first leaf-stripping operation on the sunrise side of rows in late June, and a second one in mid August. Grapes are hand-picked then sorted. Alcoholic fermentation is started up naturally in temperature-controlled wooden vats. Berries are macerated for 34 days. The vinification process ends with malolactic fermentation in barrels.
The wines are matured in 100% new French oak barrels. Final blending occurs at bottling time.
Blend: 90% Merlot, 5% Cabernet Franc, 5% Cabernet Sauvignon
