Arnoux-Lachaux; Domaine
Domaine Arnoux-Lachaux
, created in 1858 and currently run by Florence and Pascal Lachaux, covers 14.5 hectares of land spanning 15 different Burgundy appellations including Grand Cru plots in Clos Vougoet, Romanee-Saint-Vivant and Echezeaux.
Grapes go through a 3 to 4 week maceration period including cold soak and once the wines are ready for barrel, the percentage of new oak will vary from 30 to 100%. In the vineyards they believe in the "raisonee" approach, trying to limit the chemicals used whilst ensuring the health of the vines.
