Carillon; Louis
 
A "Domaine Carillon" has existed since 1502 however this specific family estate - Louis Carillon and Sons - of 11 hectares was created in 1981. Jacques and François Carillon are the current joint managers however note that from 2010, they are both setting up their own respective domains with seperate production to be called Jacques Carillon and Domain François Carillon. The wines of Louis Carillon focus on "lutte raisonee" in the vineyard and in the cellars they start with cold maceration, then once fermented go into oak barrels on their lees for 1 year, then 6 months to settle in stainless steel. 15 to 20% of oak barrels are new each year. Although they make mainly whites there are red wines from Saint-Aubin, Les Pitangerets, Chassagne- Montrachet and Mercurey.
