Chinese wine enthusiasts are developing a keen taste for Champagne, according to the president of one of the region's leading producers.
Salon's Didier Depond told the Drinks Business that Chinese wine aficionados are "coming round" to the idea of Champagne.
As such, Mr Depond suggests that China is a "completely new prospect" for the brand, although he concedes that it will take time for Salon to integrate itself with Chinese cuisine.
"The Chinese are becoming more open to the idea of sparkling wine, but they use a lot of garlic and spices in their cuisine, which can overpower Salon’s subtle flavour profile. Introducing Salon to China will be a long process," he said.
Earlier this week, Salon launched its 1999 vintage with a fish and chips lunch at the Geales restaurant in Notting Hill.
Salon is very particularly about the quality of its wine, having released just 37 vintages since the vineyard was established in 1905.
