Champagne Salon has celebrated the release of its latest vintage with a fish and chip dinner in Notting Hill.
The lauded champagne producer has made just 37 vintages available in over a century, and marked the 1999 launch with traditional British food at Geales fish restaurant, Decanter reports.
Salon makes its wines exclusively from Chardonnay grapes picked from 19 vineyards in Le Mesnil, before maturing it for at least ten years in bottle.
According to critics, the 1999 wine is "opulent, with flavours of brioche, white bread, white flowers, earth and delicate yeast flavours".
Champagne lovers can look forward to the next Salon vintages to be released - 2002, 2004 2006 and 2008, the latter of which is possibly the finest ever achieved by Salon, according to president Didier Depond.
Recently, Mr Depond told the Drinks Business that he believes China's oenophiles are on the verge of developing a love for champagne, although he admitted that it will be "a long process" as the spice-heavy cuisine served locally may overpower the subtleties of the wine.
